Cinnamon Crunch Granola

This makes a delicious breakfast addition to muesli or yoghurt, or as a snack on its own.  Granola, along with pancakes and fruit crumble, is one of our breakfast "treats".

8- cups oats [not porridge, but big flakes]
2 TBS cinnamon
2 cups desiccated unsweetened coconut
1/2 cup sesame seeds or sunflower seeds
1/2 cup golden linseed
1/4 cup cornmeal or rice flour
1/2 cup quinoa flakes or ground almonds
1 cup maple syrup
1/2 cup rapadura or coconut palm sugar
1/2 cup water
1 cup butter or coconut oil or extra-virgin olive oil, or a mixture of all
2 tsp natural vanilla extract


Stir together all dry ingredients in a big mixing bowl. 

The batch below had two cups of pistachios added... mmmn!


Melt the maple syrup, sugar, water, butter or oil together in a pan over low heat. Remove from heat and stir in vanilla. Mix thoroughly into the dry ingredients. 


Line two baking or roasting tins with baking paper, and divide the mixture between the two. Bake at gas mark 2 for 60-70 minutes, stirring every so often. Cool and store in large jars. 

I freeze this granola in jars too, and shake out handfuls of it over snacks or the kids' breakfasts.

  2. It's not hard at all! Collecting the ingredients are the most time-consuming part of it. Also, making sure you keep the heat low as it bakes so it doesn't burn. Enjoy! :)
